This is a Spanish sparkling rosé wine that has been crafted by the Can Mayol winery in Vilobí del Penedès inside of the Alt Penedès. It not belongs to the DO Cava; It belongs to the newl denomination Clàssic Penedès.
This sparkling wine was crafted from a coupage of Pinot Noir and the native Xarel·lo Vermell (Red Xarel·lo) grape varieties. The vinification process of this sparkling wine began with a maceration while the grapes remained whole for a time period of 14 hours. Subsequently the grapes were pressed and fermented in stainless steel vats at a controlled temperature. 999 de Loxarel Brut Nature from the Masía Can Mayol winery was crianza aged in Rimas in the silence and darkness of this winery´s underground cellars for a period of 14 months.
As a result, we have been provided with this very fresh sparkling wine with fruity aromatics that are not associated with long crianza aged sparkling wines.
|Appearance||This Catalan rosé sparkling wine has an attractive pink onion skin color with very pale salmon pink edges. This is a bright and crisp sparkling wine with fine bubbling that is persistent and forms a delicate crown.|
|Nose||Loxarel 999 Brut Nature rosé from the Penedès has clean and elegant aromatics that are marked by enticing red forest fruit aromatics along with ripe wild forest barriers such as blackberries and strawberries. There is a background fragrant crianza ageing notes the present marked but subtle pastries that are entwined by nuanced nut and floral aromatics. All things considered this sparkling wine has very enticing and elegant aromatics.|
This cava has a fresh, smooth, and silky entrance onto the palate that is followed by a long passage that is big and flavorful with ripe red forest fruits that are entwined by nuanced pastry notes. This palate presents some floral notes along with nuanced mineral sensations. There is very fine carbon that is perfectly integrated into this palate and become more pleasant as this wine opens to the air. 999 de Loxarel Brut Nature of Xarel-lo Vermell and Pinot Noir has a fruity finish that is reminiscent of fine pastries and leaves a long and elegant aftertaste that is slightly bitter.
|Our personal opinion||This sparkling wine is quite unique for it incorporation of the rare Spanish Xarel-lo Vermell grape varietal. We paired this sparkling wine to perfection with a Tabulé and marinated sardine dish.|
