The grapes come from organically grown vines over 30 years of age located in the heart of the Penedès DO
Following the Champenoise method, the grapes completed secondary fermentation in the bottle and the resulting wine was aged for a period of 18 months.
Finally, after disgorging this Spanish sparkling wine by the AT Roca winery was added shipping liquor and a tiny amount of sugar. Total amount is 4.5 grams per litre.
Clean, bright, pale yellow colour with some golden tinges and greenish glints.
Clean, straightforward aromas of sweet apples, citrus rind, pears, fennel and dry fruit over a background of mineral nuances and pastry remembrances.
Fresh and intense, with creamy bubbles and a very refreshing acidity. Suggestions of dry fruit, some buttery touches and a dash of aromatic herbs and balsam. Long, enticing finish with remembrances of white fruit and citrus.
