This young white wine—Austum Verdejo 2014—is crafted by the Parxet group. The Verdejo grapes used to craft this wine are always harvested by night to prevent any pre-fermentation of the ripe grapes from the sun. These are mechanical harvests and the grapes are specially cultivated in trellises to facilitate this process of harvesting. There are also some old vines planted near these grapes that are manually harvested.
Austum Verdejo from the region of Rueda is fermented at controlled and low temperatures in stainless-steel vats. The Spanish white wine Austum Verdejo is produced by the Tionio winery and this wine is a great reflection of this varietal, Verdejo.
