The interesting Cava Bertha Max Gran Reserva is made in a rather unusual way.
Produced by Caves Bertha, it is a blend of 40% Chardonnay fermented and aged for 6 months in oak, 10% Pinot Noir vinified as a Blanc de Noirs, and two traditional Cava varieties, specifically 20% Macabeo and 30% Xarel·lo.
The four varieties were separately vinified following the traditional Champenoise method. After that, this Cava Gran Reserva was aged for 36 to 46 months in the bottle.

The cava Bertha Max Gran Reserva has a very bright golden colour with some amber tinges.
The long ageing of this Cava by Josep Torres Sivill has given it a complex, rich aromatic profile. Creamy aromas of butter, baked apples and French patisserie, alongside remembrances of peach fruit, citrus, aromatic herbs and jasmine.
Smooth and pleasant, with a lush texture, perfect integration of bubbles and a zesty acidity. Besides the notes previously described, the palate of Bertha showcases some delightful toasted and smokey notes, and a very long finish with a touch of dry fruit and a fresh, uplifting tang.

The cava fermented in oak Bertha Max Gran Reserva 2007 is drinking excellently right now. On the way to its peak, it certainly is more akin to classic Champagne than to traditional Cava.
