After a meticulous harvesting process, the grapes were slightly crushed and underwent a pre-fermentation cold maceration process for 1 hour to extract the delicate rosy colour of this sparkler. After a second crushing, Bertha s. XXI Brut Rosé 2010 was fermented in stainless steel tanks at a controlled temperature. Then the base wine was bottled with the addition of sugar and yeast in order to complete secondary fermentation. The resulting wine was aged for 40 months on its lees and finally completed with the tirage liqueur. Final sugar content is 8 grams per litre.
