Born in the DO Costers del Segre, Cérvoles Blanc is a blend of Macabeo and Chardonnay coming from vines about 25 years of age located at altitudes between 700 and 800 metres, in an area called Serra de Llena. The weather conditions cause the grapes to develop a thicker skin, a fresher character and higher tannin content, resulting in fruit of exceptional quality.
Manually harvested and carefully selected, the two grape varieties of this Spanish white wine were separately vinified at the facilities of Cérvoles Celler according to their specific needs.
Cold-soaked and gently pressed, the Macabeo must was then fermented in 3,000 oak vats, and the Chardonnay completed the process in new French oak barrels. After that, both wines were aged for a period of 8 months.
Then Cérvoles Blanc 2017 was blended, gently filtered and bottled.
Drink this white wine from Costers del Segre over the next 7-9 years. Decant 30 minutes before drinking.
Only 6,800 bottles were produced of this organic white wine.
The organic white wine Cérvoles Blanc has a clean, bright, straw yellow colour with some steely tinges and golden glints.
Complex and intense, this white wine fermented in oak smells of ripe pineapple, mango and apricot, combined with some wooden notions, sweet spices and smoky notes. As it opens, this blend of Macabeo and Chardonnay also suggests a buttery note and a touch of lees over a citrus background.
Unctuous and voluminous, this wine by Cérvoles Celler is also fresh and crisp thanks to a remarkable acidity. The fruit and the oak already show a balance that can only improve over the years. Remembrances of baked apples, nougat candy, sougar-coated citrus and dry fruits. This Crianza white wine wine by winemaker Tomàs Cusiné has a long, fruity finish with an elegant mineral remembrance.

Elegant, age-worthy and suggestive, Cérvoles Blanc 2017 is an organic white wine that will pair excellently with cheese and rice dishes.

This wine has weight and a big structure. However, the main point is the balance, which I found no less than exceptional. Acidity is also great.
I love big bold white wine like this. Silky, super smooth and classy.
This wine reminds me of some great California Chardonnays. It is dense, smoothly texture, very rich and sturdy. However, it has a fresher and deeper dimension, a sort of feeling of place. Excellent, and with some very good years ahead.
