Clos Lentiscus Blanc de Blancs Brut Nature was crafted from Malvasía grapes from Sitges, Spain, from grapevines that were planted in 2004 at the El Pou vineyards in the Mountains of the Garraf Natural Park. These Malavasía grapes were harvested during the month of October. The vinification process of this cava had native yeasted added. The alcoholic fermentation of this cava was realized at controlled temperatures in stainless steel vats and then this cava was transferred into oak barrels. This cava had unprovoked malolactic fermentation and it was crianza aged for 20 months in its bottle. After its disgorgement there was not liqueur de triage added to this cava (sugars). To achieve the ultimate expression in this Blanc de Blanc cava, Clos Lentiscus, this cava was crafted following strict biodynamic procedures throughout the entire vinification process.

Appearance This Blanc de Blancs Brut Nature cava from Penedès has a clean appearance with an attractive golden colored body and a rosary of effervescence that forms persistent columns of fine bubbles that are slow-to-rise.
Nose Interesting aromatics that are marked by a unique fruity character, especially tropical fruits, and there are enticing blue floral aromatics. This nose has a background of divine crianza ageing notes that clearly present delicate notes of fine and sweet gourmet pastries.
Palate This cava has a fresh entrance onto the palate that is notably fruity with some meatiness. This is an enveloping palate that has a good body from the time the wine base was aged in oak. This palate presents a pleasant creaminess which supports the brilliant integration of this cava´s effervescence onto this palate. This effervescence will melt in your mouth along with a pleasant, fine, and well-balanced acidity. This cava has a long and fruity finish with pleasant crianza ageing notes, fine lees, and pastries. There is a delicate aftertaste that is slightly bitter. All things considered this cava has a very well-structured palate.
Our personal opinion Clos Lentiscus Blanc de Blancs Brut Nature is a delicious Spanish cava. We had the opportunity to pair this cava with a classic Spanish “coques de recpte” which is similar to an omelet with grilled vegetables. We were very happy with this cava pairing, you should try it too!
