This top--notch organic Cava is produced by the Parés Baltà winery.
It is made from vineyards located in the highest, freshest areas of Penedès.
Cuvée de Carol 2009 is made from a blend of Chardonnay and Macabeo.
Coming from a estate located at an altitude of 700 metres, the Chardonnay grapes were fermented in new French oak barrels, where they also spent 2 months ageing with weekly stirrings.
The Macabeo grapes come from old vines. They were manually selected and fermented in stainless steel tanks with daily stirrings of the lees.
Once both processes were completed, the wines were blended, bottled and the resulting wine was aged for 60 months in the cellar.
A limited-edition wine, with a production of only 5,000 bottles.
Drink until 2020.
Pale yellow colour with some bright golden tinges.
Rich aromas of dry fruit, pastry, butter, smoke and spices, giving way to notes of ripe white fruit, citrus, aromatic herbs and touches of aniseed, jasmine and sesame.
Bold, delicately tart and smooth-textured, with a creamy body that shows a remarkable balance between notes of ripe fruit, lime, white flowers and toasted almonds, and suggestions of cinnamon, vanilla and smoke. Long, complex finish.
