Don PX 2010 37,5 cl. is a sweet wine made from late-harvested Pedro Ximénez grapes that were naturally sund-dried before being pressed.
Once the wine must was obtained, it was fortified with wine alcohol until it reached the desired alcoholic degree.
This wine by the Toro Albalá winery was then aged on its lees for 12 months in stainless steel tanks prior to its bottling.
Produced in the Montilla Moriles region, Don PX 37,5 cl. is labelled as "young sweet wine" because it was not aged in wood using the traditional soleras and criaderas system.
Bright, clean orange colour with some grey tinges and some golden glints.
Intense, pleasant notes of dry fruit, dried apricots, honey, orange blossom and raisins. We also perceive notes of candied orange rind, dates, caramel, dried figs and yeasts.
Savoury, silky and dense, with great acidity, remarkable balance and a long finish, with some remembrances of dry fruit, apricots, honey and toffee.
