This is the new vintage of the Spanish red wine previously known as 2 Pájaros.

Produced by Celler Capçanes, a winery based in DO Montsant, Els Pájaros is a single varietal Samsó (aka Carignan) made from grapes 50 to 110 years of age grown in slate, limestone and clay soils.

Harvested in late September, the grapes were selected, destemmed and gently crushed. Then they fermented with indigenous yeasts in stainless steel tanks at a low temperature. After that, this red wine from Montsant was transferred into 500-litre French oak barrels, where it completed malolactic fermentation.

Finally, Els Pájaros 2016 was aged for 12 months in 300-litre French oak barrels. The last step was ageing the wine in tanks for 3 months to smoothen its edges.

Decant this Carignan from Montsant at least 1 hour before drinking. Production is extremely limited: only 1,800 bottles.

Appearance

The red wine Els Pájaros has a nice, bright cherry colour with a garnet rim.

Nose

As is usually the case with the variety, this Samsó (better named Carignan) feels deep, enticing and terroir-oriented. Loads of aromatic herbs and rich mineral suggestions, with a lively note of liquorice, a spicy touch and juicy notes of cranberries, bitter cocoa and flowers. Though it opens rather tight, Els Pájaros becomes truly expressive when it starts to deliver.

Palate

Long, confident and smooth, this red wine from Capçanes has a substantial volume sustained by a solid, fat-free skeleton and a superb acidity. Focused and well-defined, the fruit is nuanced by some toasted notes and deep mineral nuances. Tannins promise a long life, and the ending is very persistent, with some earthy and toasted remembrances.

Our personal opinion

Elegant and complex, Els Pájaros 2016 will improve considerably in the bottle over the next 5 years. Pair it with hearty dishes.
