A superbly elegant Spanish white wine, Aigua de Llum de Vall Llach is also a most unconventional wine.
Moreover, it is a single varietal Viognier, made from approximately 2,000 grapevines scattered over the towns of Porrera and Torroja del Priorat.
Harvested by hand and destemmed, the grapes were macerated for 36 days before being fermented in two containers: stainless steel tanks and French oak barrels.
This white wine from Priorat was fermented for 60 days, with daily stirrings.
Once the process was completed, part of this Viognier white wine was kept for 4 months in the same barrels, while the rest was transferred to another set of new French oak barrels, where it was also aged for 4 months.
Finally, Aigua de Llum de Vall Llach 2016 was blended and bottled.
The label features a passage of the poem "Solstici", by the Catalan poet Miquel Martí i Pol, a personal friend of the winery's managers.
Drink this white wine fermented in oak until 2022. Decant 1 hour before drinking.
Extremely limited production: 1,175 bottles.
Aigua de Llum de Vall Llach has an intense golden colour with some lemon-coloured tinges.
Exceedingly suggestive and sophisticated, this Viognier white wine is opulent, leesy and smokey. Tropical fruit is predominant, with nuances of white fruit, herbs de Provence and citrus. The background is an intriguing combination of pastry, dry fruit and minerality.
This white wine by the Vall Llach winery is remarkably smooth and lovely concentrated, with tang, structure and real complexity. Juicy, creamy remembrances of vanilla, peach, honey and balsam, with a deep mineral core and an uplifting freshness reminiscent of citrus. Luscious texture and a long finish with a mineral and smokey aftertaste.
