Belonging to the Cava DO, Àtica Extra Brut Gran Reserva is an Organic Cava made from a blend of Macabeo (45%), Xarel·lo (30%), Parellada (11%), and Chardonnay (16%).
The plants grow in clayey-limestone soils near the Mediterranean sea, at an altitude of 350 metres above sea level. The winery has completed its conversion to organic farming.
After the harvest, the base wine of this Spanish sparkling wine produced by Parató vinícola was crafted through the alcoholic fermentation of the four varieties, for a period of 16 days at a controlled temperature.
Then Àtica Extra Brut Gran Reserva 2014 was bottled, completed secondary fermentation for over a period of 45 days, and was finally aged for a minimum of 30 months on its lees.
Appearance | The Cava Ática Extra Brut Gran Reserva Brut has a bright, clean, straw yellow colour with some greenish tinges. |

Nose | This organic Cava from Penedès shows sophisticated notes of pastry, fine lees, toasted bread, raw almonds and, interestingly, carobs. On the background, this Gran Reserva from Parató Vinícola suggests some aromas of ripe white fruit, dried apricots and withered flowers. |
Palate | Fresh and crisp, this Gran Reserva Brut shows a very good integration of the bubbles with its creamy, suave body. Orange rind, garrigue, sweet spices, some buttery remembrances and dim mineral notions. Medium finish. |
