Castell Sant Antoni Camí del Sot Reserva Brut Nature
The three indigenous grapes used to produce this Cava come from old vines grown in the heart of Penedès, in a estate called "Camí del Sot". This estate has belonged to the Canals Family, owners of the Castell Sant Antoni winery, for more than 50 years. This company, incidentally, is recognized among wine connoisseurs as being a producer of artisan, exquisitely crafted Catalan sparkling wines.
Harvest was carried out manually. After a careful selection process, the base wine was produced only from the "free-run" juice resulting from a very gentle crushing of the grape bunches. That base wine was bottled and added sugar and yeasts in order to complete secondary fermentation. Subsequently, Castell Sant Antoni silver label was aged in the cellar for over a period between 28 and 36 months.
Finally, as the "Brut Nature" name declares, the wine was disgorged and released onto the market with no addition whatsoever of shipping liquor.
Bright, clean, light lemon colour with steely tinges and straw-yellow glints.
Castell Sant Antoni Camí del Sot Brut Nature displays fresh notes of citrus, fruit compote, candied fruit and orange and lemon rind. A second layer of ripe peaches and apricots, freshly baked bread, some lactic touches and some remembrances of balsam and aromatic herbs.
Extremely pleasant, linear, well-structured and gentle. Little, smooth bubbles that caress the palate, and notes of dry fruit, lemon, pomelo, and aromatic herbs, along with a dash of butter and some remembrances of white flowers. Long finish that evokes notions of citrus and spices.
