Cava Castell Sant Antoni Gran Reserva Brut Nature 2007 is a high-end Cava produced by a small company with a strong commitment to quality. Not very well-known outside of Catalonia, the Castell Sant Antoni winery produces wines that are, however, much appreciated by the good Catalan aficionados.
This sparkling wine is made from a blend of the traditional Cava triad, that is, Macabeo, Xarel·lo and Parellada, completed with a touch of Chardonnay. All of the grapes come from old vines grown in estate-owned vineyards.
Harvested at an optimal ripening state and manually selected, the grapes were gently crushed and vinified in stainless steel tanks at a controlled temperature. After the completion of alcoholic fermentation, the resulting base wine was bottled to complete secondary fermentation. Then Cava Castell Sant Antoni Gran Reserva Brut Nature 2007 was aged for a minimum of 60 months prior to its being disgorged. Finally, the wine was released onto the market with no addition of shipping liquor.
Very bright, clean, straw yellow colour with golden tinges.
Prominent notes of white fruit and yellow fruit, along with remembrances of toast, buscuits and yeasts. Delicate wet touches, lactic notions, and hints of aromatic herbs and dry fruit.
Creamy and fresh, this Gran Reserve Cava is not so tense and electric as some other Catalan sparkling wines due to the presence of Chardonnay, which gives the wine a gentler, softer side. In the mouth we find touches of baked fruit, pastry, a refreshing dash of lemon and orange rind, some hints of almonds and hazelnuts and some overtones of aromatic herbs. Little, playful bubbles and a long finish with some creamy remembrances.
