Coming from Val do Salnés, a subzone of DO Rías Baixas, Davide Observador is crafted by the prestigious winemaker Pablo Estévez, who was chosen Spain's "Best Young Wines Winemaker" in 2019.
A blend of Albariño and Godello, this Spanish white wine is sourced from a single parcel of old vines grown in very in poor granitic soils.
As with all of the wines from Bodega Davide, vinification was carried out following minimal intervention techniques. Each variety was separately fermented with the stems in stainless steel tanks, using native yeasts, for a period of 20 days. Then this white wine from Rías Baixas was blended and aged for 9 months on its lees with periodic stirrings.
Finally, Davide Observador 2021 was cold stabilized and bottled unfiltered. Then the wine was kept for a couple of months in the cellar before hitting the market.
