Produced by Venus "La Universal", the hippest winery in the DO Montsant, Dido Blanc is crafted by the well-known Sara Pérez (daughter of Josep-Lluís Pérez, owner of Mas Martinet), and her husband René Barbier Jr, the son of the great René Barbier, owner of Clos Mogador
The 2018 vintage is a blend of 55% Macabeo, 45% White Grenache and 5% Xarel·lo (known as Cartoixà in the Montsant area). This Spanish white wine is made from organically grown grapevines up to 70 years of age, located in the towns of Marçà and Falset. The soils are mainly composed of clay and limestone.
The wimemaking process of this white wine from Montsant is quite interesting. A 15% of the grapes underwent spontaneous fermentation with wild yeasts in open vats. Another 20% of the grapes were macerated with their skins for 24 hours, and the rest were gently crushed.
Finally, Dido Blanc 2018 was aged for 10 months. A 30% of the wine was aged in clay amphorae, and the rest in oak barrels of different sizes.
Serve it cool, not chilled. Aerate this organic white wine some time before drinking.
The Spanish white wine Dido Blanc has a pale lemon colour with some steely tinges.
Full of nuances and subtleties, this organic white wine has a complex and rewarding nose. This wine by Sara Pérez and René Barbier carries aromas of fresh citrus, nuanced by delicate notes of jasmine and fennel, some restrained wooden touches, hints of aromatic herbs and dry fruit, and a marvelous mineral background.
This wine by Venus La Universal is expansive, but never overblown. Smooth, but not sweet. Lively notes of citrus and ripe white fruit, nuanced by some with salty sensations -olives-, smokey hints and some spicy remembrances. Mouthwatering acidity, which refreshes the palate and leaves one wanting for more. Dido Blanc has a long finish with a mineral, earthy aftertaste
