The Dominio de Cair winery, a brand of Bodega Luis Cañas, produces Cair Selección La Aguilera basically from Tempranillo, with just a 5% of Merlot.
The grapes are sorted from 40 to 50-year-old vineyards located at an altitude of 800 metres above sea level, in a pristine area surrounded by forests, in the heart of DO Ribera del Duero.
Harvested by hand and selected in the cellar, the grapes underwent a cold-maceration in order to extract colour and aromas. After that, this Spanish red wine was fermented in stainless steel tanks.
Malolactic fermentation took place in new French and American oak barrels (50%-50%). Then, Cair Selección La Aguilera 2019 was aged for 14 months.
Finally, this red wine from Ribera del Duero was bottled and aged in the for a further 12 months before its release.

Nose | Intense and well-balanced, this blend of Tempranillo and Merlot suggests some toasted and moka aromas, with notes of mulberries and damson and hints of pepper, cocoa and balsam. |
Palate | With a friendly entrance, this red wine from bodega Dominio de Cair is silky and tasty, showing a good balance between the fruit and the oak. Good acidity and slightly rugged tannins, with a long, creamy finish with a balsamic and earthy aftertaste. |
