Produced by bodega Quinta de la Quietud, In Quietud by Nature is a minimal intervention, unoaked, no sulphites added Spanish red wine.
It is made solely from Tinta de Toro grapes, sorted from organically farmed, non-irrigated vines 20 years old on average, located in the DO Toro.
Picked by hand, once in the cellar were destemmed, gently crushed and fermented in stainless steel tanks. After that, this red wine from Toro was macerated for 2 weeks, with 2 daily pump-overs. Then the wine was drawn-off and aged on lees for 6 months in the tanks, with periodic stirrings.
Finally, In Quietud by Nature 2019 was aged for a further months before bottling.
It is advisable to decant this no added sulphites wine 30 minutes before drinking.
