Details
This is the new vintage of Pago de Cirsus Vendimia Seleccionada, from the Pago de Cirsus winery.
Produced in the Designation Vino de Pago Finca Bolandín, Navarra, this Spanish red wine is crafted by a team directed by Jean Marc Sauboua, one of France's most prestigious winemakers and former technical director of the legendary Château Haut-Brion in Bordeaux.
Made from a blend of Tempranillo, Merlot and Syrah coming from low-yielding vineyards, the grapes were harvested by hand, carefully selected and gently destemmed.
Then they were cold-soaked in stainless steel tanks, and after that 70% of them remained in the tanks and the rest were transferred into French oak vats to complete alcoholic fermentation.
After that, Pago de Cirsus Vendimia Seleccionada 2021 was aged for 12 months in new French oak barrels.
Finally, this Crianza red wine was clarified with egg whites prior to its bottling.
Aerate 30 minutes before drinking.
