Details

This Spanish sweet white wine was born in the sunny, southern Spanish region Montilla Moriles. However, instead of being aged through the traditional soleras and criaderas system, Don PX was produced from concentrated wine must.

Thus, after late-harvesting the Pedro Ximénez grapes, they were naturally sun-dried for a minimum period of 7 days in order to achieve a high sugar content.

Then the grapes were crushed through an hydraulic press to obtain the wine must.

After that, Don PX 2015, by the Toro Albalá winery, was fortified with 2% wine alcohol until it reached a total alcohol content of 17%. After that, this single varietal Pedro Ximénez aged for 12 months in stainless steel tanks.

This wine was not filtered prior to its bottling.

Appearance

The sweet wine Don PX has a very bright, clean, low amber-coloured robe with some golden tinges and some greenish glints.

Nose

This sweet wine by the Toro Albalá winery suggests aromas of raisins, orange rind, orange blossom and honey, combined with notions of dried figs, dates, yeasts and coffee.

Palate

Velvety and unctuous, this sweet Pedro Ximénez from Montilla-Moriles has a great acidity, something that perfectly balances its sweet character. Flavours of honey, dried apricots, dates, caramel and toffee underpinned by hints of citrus and aromatic herbs. Long, pleasant finish.

Our personal opinion

More than a dessert wine, Don PX 2015 is a dessert in its own right. If you want to try something different, though, we suggest that you pair this wine with blue cheeses or foie.
