The grapes come from estate-owned vinyeards located in High Penedès. They were harvested at dawn by hand.
Once in the cellar, this Spanish sparkling wine from Freixenet was macerated for 5-6 hours to colour the must. This Cava was subsequently drawn-off, gently pressed and fermented in stainless steel tanks under controlled temperature.
This blended rosé Cava was then bottled to complete secondary fermentation. After that, Freixenet Elyssia Pinot Noir Brut was aged for a minimum of 10 months.
Finally, this rosé sparkling wine was added 9 grams of sugar per litre after the disgorgement.
The Cava Freixenet Elyssia Pinot Noir Brut is medium salmon with some bluish and copperish tinges.
Aromas of wild berries, white pepper and pastry, with a pinch of citrus and some bitter herbs. This blend of Pinot Noir and Trepat has a nice bouquet.
Nimble, fresh and gently fizzy, this sparkling wine Freixenet has an excellent acidity and a long finish with remembrances of raspberries and herbs.
