Product Description
Giró Ribot Tendencias Extra Brut cava from Penedès has been crafted from a traditional coupage of Macabeo, Xarel-lo, and Parellada, along with 15% Chardonnay grapes. These grapes were cultivated from the Giró Ribot winery´s own grapevines that have ages between 20 and 25 years. All of the grapes used in this wine were harvested by hand during the second half of August to the end of September depending on the grape varietal. After the grapes are destemmed they received a cold maceration to extract the maximum aromatic expressions from the grape skins. The fermentation process was realized in stainless steel vats at controlled temperatures between 54 and 57 ºF (12 and 14 ºC). This vinification process further helped this sparkling wine to extract the full aromatics from the grapes as possible. The second fermentation process of the Extra Brut cava, Tendencias de Giró Ribot, was realized at this winery´s underground caves for a time period between 15 and 18 months. This crianza ageing process did not finish until the enologist believed that this cava had realized the silky texture that they desired. After this the cava was disgorged with a residual sugar content of 6 grams per liter.

Appearance In a glass, Giró Ribot blue bottle presents a clean and crystal clear gold colored body with nuanced green flashes. This cava has persistent columns of bubbling effervescence with rise to form an abundant tear.
Nose Subtle and attractive aromatic expressions. The Chardonnay of this coupage provides for exotic fruit aromatics such as pineapples and bananas. There are also less tropical fruit aromatics present that are delicate with ripe pear being the protagonist. There are crianza ageing notes that present nuanced fine pastries which leave a very pleasant sensation on the palate.
Palate A lively entrance onto the palate that is fresh and fruity with a very pleasant creamy texture from the effervescence that melts away beautifully on the palate. This is a big palate that has a great balance between its acidity and residual sugar content. The finish presents delicate pastry notes. All things considered, this cava—Giró Ribot Tendencias Extra Brut—has a brilliant palate that is very well-structured.
Our personal opinion Giró Ribot Tendencias Extra Brut presents a new image of modern sparkling wines. This is a delicious cava that can be enjoyed in the morning, day, or night and it is perfect as an aperitif, with barbecued sausages, chorizo, or butifarra, along with a very wide range of gastronomic pairings.
