Naveran Millessimé 2013 Brut Nature is crafted from the traditional Cava triad of Macabeo, Xarel·lo and Parellada, along with a dash of Chardonnay
With this sparkling wine, the Caves Naverán winery aims to pay an homage to the French Champagne Maisons, as they only label their products as "Millésimé" when they come from a single vintage. Because of the climate of the Champagne region, it is very difficult for the grapes to ripen there. Thus, most Champagnes are made from a blend of different vintages in order to balance them, with single-vintage Champagne being an exception.
This problem, incidentally, rarely arises in the Cava region, as the climate allows the grapes to ripen fully, so there's no need to combine different vintages.
Anyway, the four grape varieties from which this Naveran Brut Nature Millesimé 2011 is made were harvested, pressed and separately fermented in stainless steel tanks at a controlled temperature. Once primary fermentation was completed, the wine was blended and completed secondary fermentation in the bottle.
Finally, the wine was aged for two years in the bottle. Prior to its commercial release, this Spanish sparkling wine was clarified and disgorged .

Nose | Fine aromas of pastry, some lactic touches and buttery remembrances. Some hints of citrus and dry herbs, flowery nuances and dim herbal notions. |
Palate | Fresh, smooth and with a velvety palate, this Spanish cava Brut Nature Millesimé displays notes of white fruit, remembrances of almonds and nuts, a dash of jasmine and a touch of orange rind. Nice, little bubbles, great acidity and long, refreshing finish. |
