This sweet red wine is entirely made from Monastrell, one of Spain's most important indigenous varieties.
The grapes were harvested in late Autumn, at a time when they had reached full maturity and had a high sugar content.
They come from the best plots of the winery, planted with pre-phylloxera, ungrafted vineyards located at the very heart of Jumilla.
Once in the cellar, the grapes were partially fermented to preserve the naturally sweet character of the wine and macerated with the skins.
Dulce Olivares Monastrell 2013 was not aged in oak. Instead, it was bottled and aged for 2 years in the cellar.

Cherry colour with a ruby rim.
Notes of dried figs, black fruit, tapenade, violets, raisins, aromatic herbs and some dim mineral undertones. Remarkably complex.
Meaty, bold and vibrant. It has a silky, voluptuous body sustained by a crisp, tight acidity. Liquor-infused fruit, deep mineral undertones, some remembrances of chocolate, spices, blue flowers, black olives, Mediterranean garrigue and some earthy nuances. Extremely long, complex finish.

Somewhat reminiscent of a great Port, Olivares Dulce Monastrell 2013 pairs marvelously with blue cheeses and dark chocolate.
