A varietal Tempranillo, the grapes come from the Escobal parcel, a south-oriented, organically farmed vineyard with limestone and rocky soils located at around 550 metres of altitude, in an area with a Mediterranean climate with some Continental influences.
The vines, over 25 years old, were hand-harvested and selected both on site and in the cellar. Destemmed and cold-macerated, the grapes were fermented in stainless steel tanks with gentle pump-overs for a period of 14 days. After that, Ostatu Escobal 2019 went through malolactic fermentation in French oak vats, where it was subsequently aged for 16 months.

Quite expressive, this organic Tempranillo suggests some intriguing citrusy hints, alongside lively aromas of damson, bilberries, Morello cherries and rose petals, with a balsamic and mineral remembrance.
Yummy and fruit-forward, this wine of bodega Ostatu is lively and mildly tannic, with a crisp acidity which cleanses the palate, subdued wooden notes and a long finish with a spicy and balsamic aftertaste.
