This is the new vintage of Collita Roja, produced by Celler Pardas.
A very interesting Spanish red wine, this varietal Sumoll coming from grapevines planted in the mid XXth century in two estates located in the nothern area of Penedès. Both are organically farmed, using no pesticides or chemicals whatsoever.
Sumoll, by the way, is a variety which produces wines with a light body, lively tannins and a remarkable acidity and crispness.
The grapes were hand-picked in September. Meticulously selected, they were first macerated with the skins for two weeks. After both alcoholic and malolactic fermentations, this red wine from Penedès was transferred into oak barrels, concrete eggs and stainless steel tanks. There, this organic red wine was aged for 6 months. Finally, it was bottled and aged for some months before its release.
The production of Collita Roja 2015 totalized 5,525 bottles.
It is important that you decant this wine for a substantial period of time before you drink it. Sumoll is a very reductive variety which usually opens quite tight.
The wine Pardas Collita Roja has a very bright, clean, medium-high cherry-coloured robe with a violet rim.
This varietal Sumoll from Penedès is fragrant and enticing. Aromas of Mediterranean garrigue, fresh red fruit, citrus and flowers. On the background, this organic red wine suggests liquorice, spices and some earthy notes.
Fresh and razor-sharp, with a linear, light body and a wonderful tension. This red wine of Celler Pardas is reminiscent of wild strawberries and aromatic herbs, with a citrusy note and some earthy undertones. Bold tannins, exceptional acidity and long, enticing finish.

As indigenous as it is attractive, Pardas Collita Roja 2015 will pair excellently with meat dishes.
