This is the new vintage of Pardas Xarel·lo Pur, a single varietal Xarel·lo by Celler Pardas.
Produced from Penedès' most representative and age-worthy native white variety, the grapes used to craft this Spanish white wine come from two old, low-yielding, organically farmed vineyards: "La Vella", planted in 1979, and "El Muc", in 1972.
Harvested by hand and selected on site and in the cellar, they were refrigerated, destemmed and gently pressed before cold-macerating for 12 hours with the skins. Then, only 60% of the free-run juice was then fermented in Chestnut and French oak barrels.
After that, Xarel·lo Pur 2018 was subsequently aged for 6 to 8 months. Finally, this white wine from Penedès was stabilized and clarified before being bottled.

Nose | As usual, the charm of this Xarel·lo from Penedès lies in its somewhat restrained and subtle character, conveniently enlivened by the nicely integrated wood. This white wine by Celler Pardas suggests some aromas of white and yellow fruit, alongside notes of flowers and aromatic herbs over a background of toast, spices and honey, all of them seasoned with a distant mineral echo. |
Palate | Substantial and solid, with a tight structure and a significant complexity, the palate of this Crianza white wine is reminiscent of citrus and aromatic herbs, with a mineral note which becomes ever more prominent, framed by some delicate tropical notes. First-class acidity, a distinctive feature of Xarel·lo, and long finish with an aftertaste of spices, mineral and garrigue. |
Our personal opinion | Aged-worthy and terroir-oriented, Pardas Pur Xarel·lo 2018 is one of the best Xarel·lo white wines produced in Penedès. Pair it with creamy cheeses, shrimp and white meat dishes. |
