A very interesting wine, Pardas Rupestris is produced by the intellectually curious, always self-challenging Celler Pardas winery.
Since the vineyards are planted in shallow calcareous soils, the roots are in direct contact with the bedrock, a fact that imparts a distinctive minerality to the fruit.
Harvested by hand and carefully selected, the grapes were destemmed and gently crushed prior to fermentation. Then they were macerated for 3 to 4 days, after which Pardas Rupestris 2017 must was drawn off, fermented and aged on its lees for 4 months with periodic stirrings.
A faithful expression of traditional Penedés, this organic white wine should be drunk over the next 2-3 years.
The wine Pardas Rupestris has a clean, bright, pale yellow colour with some steely tinges.
Fresh and expressive, Rupestris by Celler Pardas smells of white flowers, citrus and aniseed. On the background, a perfume of orange blossom, aromatic herbs and deep mineral undertones.
Fresh and dry, this young white wine from Penedès has a straightforward, no-nonsense quality and a very good acidity. Citrus, freshly-cut grass, jasmine and sour apples. This wine by Celler Pardas has a crisp, medium long finish.
