White Wine Pardas Rupestris 2019

A very interesting wine, Pardas Rupestris is produced by the intellectually curious, always self-challenging Celler Pardas winery.
This Spanish white wine is made from an interesting blend of Xarel·lo, Xarel·lo Vermell and Malvasia de Sitges, three indigenous Catalan varieties which make for a rather unique wine.
Since the vineyards are planted in shallow calcareous soils, the roots are in direct contact with the bedrock, a fact that imparts a distinctive minerality to the fruit. This is were the name Rupestris comes from.
Harvested by hand and carefully selected, the grapes were destemmed and gently crushed prior to fermentation. Then they were macerated for 3 to 4 days, after which Pardas Rupestris 2019 must was drawn off, and fermented for 20 days at a controlled temperature.
Then this organic white wine from Penedès was aged on lees for a month and a half, after which it spent a further three months in concrete diposits before being bottled.

Palate | Fresh and dry, this organic white wine has a straightforward, no-nonsense quality and a very good acidity. Citrus, freshly-cut grass, jasmine and sour apples. This wine of Celler Pardas has a crisp, medium long finish. |
