White Wine Pardas Rupestris 2020
Availability: In stock
Since the vineyards are planted in shallow calcareous soils, the roots are in direct contact with the bedrock, a fact that imparts a distinctive minerality to the fruit. This is were the name Rupestris comes from.
Harvested by hand and carefully selected, the grapes were destemmed and gently crushed prior to fermentation. Then they were macerated for 3 to 4 days, after which Pardas Rupestris 2020 must was drawn off, and fermented for 20 days at a controlled temperature.
Finally, this organic white wine was aged on lees for a month and a half, after which it spent a further three months in concrete diposits before being bottled.
The wine Pardas Rupestris is high straw with some steely tinges.
Fresh and expressive, this blend of Xarel·lo, Xarel·lo Vermell and Malvasia insinuates aromas of white flowers, citrus and aniseed, with orange blossom, aromatic hebs and mineral notes in the background.
Fresh and dry, wine from Celler Pardas has a pleasantly straightforward, no-nonsense quality and a very good acidity. Citrus, freshly-cut grass, jasmine and sour apples, with a medium long finish.
