A part of the R-Evolution collection of the Parés Baltà winery, Parés Baltà Còsmic is made from Xarel·lo and Sauvignon Blanc.
The grapes come from two vineyards located, respectively, at 690 and 500 metres of altitude, in DO Penedès.
Handpicked and destemmed, the two grape varieties were separately vinified.
First, they were cold-macerated for 4 hours and gently crushed. Then this Spanish white wine fermented under low temperature for 12 days in stainless steel tanks.
After that, Parès Baltà Còsmic 2021 was kept in contact with its lees for 3 months with daily stirrings.
Pair this organic white wine with oriental cuisine, shrimp and pasta.
