Crafted by the Parés Baltà winery, Parés Baltà Mas Elena is an interesting Bordeaux blend Spanish red wine.
The wine is made from Merlot, Cabernet Franc and Cabernet Sauvignon. The grapes were sourced from three certified organic vineyards: Finca Els Pujols, Finca Cal Miret and Finca La Torreta, all located in Penedès.
Each of the three grape varieties was separately harvested and vinified. Cold-soaked to foster the extraction of colouring and phenolic compounds, subsequent alcoholic fermentation of this Penedès red wine was carried out at a controlled temperature of 25ºC using indigenous yeasts. The duration of alcoholic fermentation also varied according to the different grape varieties.
Once malolactic fermentation was completed, Parés Baltà Mas Elena 2019 was aged for 8 months in 2nd and 3rd year French oak barrels from Allier.
Pair this organic red wine with cured and BBQ'd meats, or with cured cheeses.
