This is the new vintage of the well-known Parxet Gran Reserva M.C. The name is a reference to Maria Cabané, the wife of Bodegas Parxet's founder. Some years ago, the winery was acquired by the Carlyle Group, and merged with Carlyle-owned Codorníu.
Once in the cellar, the grapes were destemmed and traditionally vinified. Then this Cava from Alella was bottled and added yeasts and sugar to complete secondary fermentation.
Finally, Parxet Gran Reserva M.C. 2015 was aged for a minimum of 30 months. After being disgorged, this Spanish sparkling wine was added a tiny amount of sugar, resulting in a Gran reserva extra brut.
This Cava from Alella will perfectly accompany a whole meal.
The Cava Parxet Gran Reserva M.C. is pale yellow, with some golden tinges.
Delicate and fresh, it smells of citrus, white fruit, green apples and fennel. This blend of Pansa Blanca, Macabeo and Parellada also suggests aromas of dry fruit, pastry, fine lees and dim herbal remembrances.
The entrance is fresh, lively and pleasant, with a smooth body and a creamy, caressing mousse. This Gran Reserva from Bodegas Parxet is well-structured, crisp and pleasant, with a long, delicately bitter and saline finish.
