Details
A varietal Spanish white wine from DO Rías Baixas, Pazo de Señorans is produced by bodega Pazo de Señorans from estate-owned vineyards.
The vineyards are located in the Salnés valley, an area in the province of Pontevedra which is considered the ideal place for cultivating the Albariño variety.
Harvested by hand, the grapes were first cold-soaked and then fermented in stainless steel tanks at a temperature of 18ºC.
After that, this white wine from Rías Baixas was aged on its lees for about 5 months. Finally, Pazo Señorans 2021 was clarified before bottling.
Pair this white wine aged on lees with fish and shrimp dishes.

A not-to-be-missed Albariño.

Señor ans
For once I followed the staff advise, which suggests to pair this wine with a roasted chicken. It really works!! The crunchy note of the meat was perfectly complemented by the fresh, smooth, creamy body of this Albariño.
