White Wine Principia Mathematica 2014

To an extent, the ambition of Irene Alemany and Laurent Corrió has been fulfilled, as a substantial number of winegrowers in Penedès are currently producing honest, demanding, terroir-oriented white wines.
Principia Mathematica 2013 is a varietal Xarel·lo white coming from more than 30-year-old vines located in Sant Pere de Molanta, in the Garraf Mountains. The vines are planted on calcareous soils with an abundance of mineral fossils.
Produced following the guidelines of a Burgundian Chardonnay, two thirds of Principia Mathematica 2013 were fermented and aged for 6 months in new, 600 and 700-litre French oak barrels with periodic lees-stirring. The remaining third of the wine was vinified in stainless steel tanks and also aged for 6 months on its lees.
Very bright, clean, pale yellow colour with steely tinges.
Well-balanced notes of peaches, apricots, nectarine, mango, citrus and aromatic herbs. A secondary layer of white flowers, fennel and subtle wooden remembrances, such as white pepper and vanilla.
Unctuous and rich, displaying flavours of ripe pears, peaches, mango, citrus and some mineral undertones. Tense acidity and long mineral finish with some smoky nuances.

Principia Mathematica 2013 is a limited-edition white that presents a different expression of the Xarel.lo grape. It pairs wonderfully with rice dishes and creamy chesses.
