The Tinta de Toro grapevines from which this Spanish red wine originates were mostly planted in 1977. Some of them, though, are even older. They grow in sandy and rocky soils under a continental climate, with great temperature differences between daytime and nighttime.
The winemaking process of San Román was extremely meticulous. Each plot of organically certified vines was separately harvested and fermeted by Bodegas Maurodos depending on its specific needs and characteristics,
The 2017 vintage of this Spanish red wine from Toro was one of the driest in recent history. Harvest took place in late August, and production was below average. All things counted, it was an Excellent vintage.
The grapes were destemmed and fermented at a low temperature in different types of containers.Macerated with the skins, the resulting wine must was gently drawn off and transferred into French and American oak barrels, 20% new. After that, San Román 2017 was aged for 24 months, and clarified with egg whites before its bottling in Februart 2020. Before its commercial release, it spent a further 6 months in the cellar.
Decant this Toro red wine 1 hour before drinking. Bear in mind that this is a wine that will grow over time.

Nose | Delightfully harmonious, this Tinta de Toro suggests notes of juicy black fruit, a panoply of oriental spices, enchanting floral touches, hints of toffee and cinnamon, along with a mineral background and some forest-like sensations. The masterful touch of star winemaker Mariano García shines through. |
Palate | Bold and robust, this Toro red wine is very elegant too. This is, by the way, the crucial feature of the best wines from Toro: the combination of the big structure of the grape, together with a delicacy one would never expect in such brawny wines. Loads of black fruit, wonderful mineral notes and ripe tannins. Texture is silky and acidity is no less than extraordinary. This wine from Bodegas San Román has a long, persistent finish with some spicy, fruity remembrances. |
