Details
An uncommon Spanish sparkling wine produced by the Mas Candí winery, Tinc Set Ancestral is crafted with the ancestral method. In other words, this is a Pet Nat wine (from the French "Pétillant Naturel").
A blend of 60% Xarel·lo and 40% Parellada, this Penedès sparkling wine was produced from vines grown in clayey-limestone soils located in Avinyonet del Penedès. The vineyards are farmed with minimal intervention techniques, and following organic and biodynamic procedures.
The grapes were picked up by hand and refrigerated on arriving at the cellar. Following the Ancestral Method, alcoholic fermentation began in stainless steel tanks, but was finished inside the bottle. After that, Tinc Set Ancestral 2019 was aged on its lees for 8 months.
This unpretentious Pet Nat from Penedès is simply irresistible. Pair it with light dishes or drink it without food.
