First, this Spanish sparkling wine is mostly made from 35 to 75-year-old Xarel.lo grapevines. Xarel·lo is a variety with a remarkable ageing potential, and here it is complemented by tiny amounts of the traditional Macabeo and Parellada.
Second, a portion of the Xarel·lo wine was vinified and aged for 5 months in oak barrels, and the rest in stainless steel tanks. This fact adds a remarkable creaminess and roundness to the final wine.
As for Macabeo and Parellada, both were also aged in steel tanks. All were vinified with indigenous yeasts.
After a traditional vinification, Torre Galimany Brut Nature Gran Reserva 2013 was aged for a minimum of 36 months in the cellar. It was added no shipping liquor after being disgorged.
Production of 20,000 bottles. Drink through 2022.
The Cava Torre Galimany Gran Reserva has a straw yellow colour with some greenish and golden tinges.
Fragrant and elegant, this Brut Nature suggests notions of toast, dry fruit and spices, underpinned by aromas of ripe white fruit, dry fruit, quince jelly, white flowers, citrus and pastry, which point to the Xarel·lo fermented in oak.
Bold and well-structured, this Cava by Segura Viudas has a silky body and a refreshing acidity. Bubbles are nice and creamy, and we enjoy some delicate notes of almonds, flowers, toast, ripe white fruit and coco. Long, complex finish.

The excellent Torre Galimany Brut Nature Gran Reserva 2013 is a serious Cava from Penedès that pairs wonderfully with hearty dishes and strong cheeses.
