Cava VallDolina Brut Gran Reserva 2012

Made from a traditional blend of Macabeo, Xarel·lo, Parellada, plus some Chardonnay, alcoholic fermentation of the still wine took place at a controlled temperature of 16ºC. Then this Spanish organic cava VallDolina Gran Reserva Brut was bottled and added sugar and yeasts to complete secondary fermentation, in this case at a temperature of 13ºC.
Aged for 48 months on its lees, degorging was performed manually, that is, without freezing the upper bottleneck. Finally, this great Cava was added a tiny amount of dosage liquor, the well-known "liqueur d'expedition", to harmonise it and round it off.
This organic gran reserve cava ValldolinaBrut displays a clean, bright, straw yellow colour with steely tinges.
This organic sparkling wine from Penedès displays an earnest, old-school nose of white fruit, herbs and dry fruit. We also perceive hints of butter and smoke, along with notes of toasted almonds.
This sparkler shows a manly demeanour, displaying flavours of citrus, aromatic herbs and some hazelnut and almond remembrances. The wine has a vinous quality in it, with a somewhat big body that is exquisitely balanced by a tight acidity and a well-integrated bubble. Long finish with a creamy aftertaste.
