Cava VallDolina Reserva Brut Nature

VallDolina Reserva Brut Nature is a Sparkling wine made from the three traditional varieties used in the Cava DO, namely Macabeo, Xarel·lo and Parellada, complemented with a tiny amount of Chardonnay.
Located in the Garraf Mountain, the vines are grown by the Masia Can Tutusaus winery following the principles of organic farming. Soils are composed of red clay and limestone.
After the harvest, the wine was vinified and fermented in stainless steel tanks. Secondary fermentation took place in the bottle.
Finally, VallDolina Reserva Brut Nature was aged for 24 months in the bottle prior to disgorgement, which was performed manually.
Production of only 20,000 bottles.
Bright, straw yellow colour with some greenish tinges.
Honest aromas of yellow apples, pears and aniseed, combined with aromas of aromatic herbs, yeasts and some mineral undertones.
Dry and well-balanced. It displays notes of white fruit, herbs and pastry over a mineral background. Well-integrated bubbles, crisp acidity and medium finish.
