The Celler Dosterras winery is spread out through the municipalities of Marçà, Capçanes, and Falçet, all within the Montsant Denomination of Origin (DO). The owner and lead enologist of the Celler Dosterras winery in Montsant is Josep Grau. Mr. Grau personally selects the best grapes from grapevines that are between 40 and 100 years-old to be used in his wines. These wines are very expressive of their unique terroir.
The Celler Dosterras winery has 22 hectares of grapevines in 15 different vineyards, each of which has soils that are rich in minerals. These soils are full of clay, limestone, granite, and licorella slates. These unique soils, along with the extreme and unpredictable weather in this microclimate provide for authentic wines that can be very surprising.
This winery is environmental friendly in every aspect of grape cultivation and wine vinification. All of this winery´s vineyards practice organic grape cultivation and plant biodiversity without using aggressive processes with the plants or soils. For this reason this winery has very low yields of extraordinary high quality grapes.
The vineyards at the Celler Dosterras winery harvest their grapes only after they have realized their peak ripeness. These grapes are then transported to the winery in the most cautious manner possible to ensure that they arrive at the winery in their best condition. During the harvest there is a meticulous selection of the grapes to ensure only high quality grapes are brought to the winery.
The alcoholic fermentation process is realized in 1,500 Liter (400 US Gallons) open oak vats as well as stainless steel vats. This is a spontaneous fermentation that is realized naturally over 20 to 30 days. This winery also uses native yeasts during the fermentation that provide authentic notes of the Montsant terroir in these wines.
Celler Dosterras winery uses fine grained French oak barrels for their crianza ageing processes. Of these French oak barrels, 20% are new and the rest have aged wine for time periods between two and four years. In addition to the distinctive volume that these French oak crianza ages provide the wine, these oak barrels allow for malolactic fermentation. Just as the alcoholic fermentation, the malolactic fermentation also occurs spontaneously in the spring.
The wines by the Dosterras winery are bottled in a unique manner without being clarified or filtered. These wines are always bottled following the ancient tradition of following the lunar cycle. This winery´s products, Vespres 2009 and Dosterras 2008 both received Robert Parker 2013 scores that exceeded 90/100 points and this winery consistently receives high Parker scores for its products.
This year, 2013, the Celler Dosterras winery has presented a grand new white wine, Dosterras Blanc MMXII. This Spanish white wine has been crafted from Pedro Ximénez, Marsanne, Roussanne, and Grenache Blanc grapes. This wine was crafted by hand from start to finish, from organic grapes and a very cautious vinification process.
