Freixenet Elyssia Gran Cuvée Brut belongs to the "Cuvées de Prestige" series, a collection of top-quality sparkling wines launched in 1997 by the Freixenet winery.
This Cava is made from an interesting blend of two local grapes, Macabeo and Parellada, and two international ones, Chardonnay and Pinot Noir, all of them coming from vines located in the heart of Penedès and belonging to the Cava DO.
Each of the grape varieties was separately harvested and vinified depending on its ripening state and specific requirements. Interestingly, Pinot Noir was vinified in white, that is, the grape juice was not kept in contact with the grape skins, thus preventing the coloration of the wine must.
Once all of the grapes had been vinified, the wine was blended and bottled. Then Freixenet Elyssia Gran Cuvée Brut was added yeasts and sugar and aged for 18 months in the cellar, where it completed secondary fermentation. Finally, before final corking the cava was disgorged and added 9 grams per litre of sugar in order to make it an easy- drinking, utterly enjoyable sparkling wine.
Clean, bright, pale yellow colour with steely tinges and dim greenish glints.
Ripe aromatic notes of jammy fruit and muffins, along with some floral overtones, subtle citrus nuances and intimations of bitter herbs, dry fruit, quince and toast.
Freixente Elyssia Gran Cuvée is wide and creamy, displaying notes of fine pastry, ripe white fruit, enticing hints of chamomile and quince jelly and some bitter notes. A tense acidity brings freshness to the wine and conveniently refreshes the palate. Long finish with remembrances of white fruit.

Freixenet Elyssia Gran Cuvée Brut has a wonderfully "old-school" quality. Easy to drink, creamy, extremely pleasant and well-balanced.
