Details

The Chardonnay and Pinot Noir grapes from which this Grand Reserve Cava is made come from a single estate located in Sant Sadurní d'Anoia.

Produced by Sumarroca, the Chardonnay was fermented in new French oak barrels from Allier, and then aged for three months with periodic stirrings.

As for the Pinot Noir, it was fermented in stainless steel tanks avoiding any contact of the wine must with the grape skins in order not to colour to the wine.

Once both wines were blended and bottled, Núria Claverol Allier 2012 was aged in the bottle for a minimum of 36 months.

This high-end sparkling wine is a Cava de Paraje ("qualified single-estate Cava"), the new classification for premium Cava recently launched by the Cava Regulatory Board.

The new category identifies the wines made from over 10-year-old grapes, harvested by hand and aged for a minimum of 36 months.
