After the harvest, the grapes were destemmed and macerated for some hours to extract colour and aromas. Then they were gently pressed and fermented at a controlled temperature.
Purposefully, this Spanish white wine was not further aged in oak to preserve its delicately mineral character.

The white wine Palomo Cojo has a very bright, straw yellow colour with some greenish tinges.
Both fruity and sharp, this white wine from Rueda suggests aromas of pears, green apples, pineapple, citrus and apricot compote, displayed over a mineral and herbal background.
Pleasant and fresh, this Verdejo white wine has a smooth passage through the palate, with a lively acidity. Notes of citrus, white fruit and aromatic herbs. Delicately bitter finish.
