The main feature of this Parxet Brut Nature is that, instead of being crafted from the Xarel.lo variety, it is made from Pansa Blanca.
The Pansa Blanca is a sort of stepbrother of Xarel.lo, native to the region of Alella.
Harvested at their optimal ripening state, once in the cellar the grapes were destemmed and carefully selected.
After that, they were fermented in stainless steel tanks.
Then this Spanish sparkling wine of Bodegas Parxet was bottled to complete secondary fermentation.
Finally, this Brut Nature by Parxet was aged for a period of 20 to 30 months.
The Cava Parxet Brut Nature has a very bright, clean pale yellow colour with some greenish tinges.
Fragrant notes of pears, citrus, flowers and fennel, On the background, this Cava made from Pansa Blanca suggests hints green almonds, pastry and fennel, combined with a salty remembrances.
Fresh and mild, with some inviting, creamy bubbles and a crisp acidity. Notes of toast, fennel, aniseed, pomelo and jasmine. This Parxet Brut Nature is extremely drinkable, with a crisp finish that leaves remembrances of dry fruit and citrus.
