A single varietal Albariño white wine made from estate-owned vineyards, Pazo Señorans is produced by one of Galicia's best producers.
The Pazo de Señorans winery is located in the Salnés Valley, an area belonging to the province of Pontevedra.
Harvested by hand, the grapes were first cold-soaked and then fermented in stainless steel tanks at a temperature of 18ºC.
After that, this Spanish white wine was aged on its lees for about 5 months. Finally it was aged for a further 4 months before its release.

The white wine Pazo Señorans has a bright yellow colour with some greenish tinges.
The nose of this white wine from Rías Baixas displays some well-defined notes of peaches, apricots, citrus and pineapple, along with notions of fennel and aromatic herbs.
Well-structured and smooth. Remembrances of bitter herbs, tropical fruit, and a salty touch. This Albariño white wine by the Pazo de Señorans winery has a very good acidity and a long finish with remembrances of exotic fruit.

From the heart of Galicia, Pazo de Señorans 2017 pairs wonderfully with seafood dishes. However, if you feel adventurous and want to try something new, pair it with a roasted chicken or a pig roast.

A not-to-be-missed Albariño.
For once I followed the staff advise, which suggests to pair this wine with a roasted chicken. It really works!! The crunchy note of the meat was perfectly complemented by the fresh, smooth, creamy body of this Albariño.
