The white grapes come from 15 to 40-year-old vines located in a very special area of the Penedès region called Conca de l'Anoia (basin of the Anoia River.) The terroir is highly characteristic, as it is composed of marine fossils that bring a particular finesse and minerality to the wine.
Produced by the prestigious Raventós i Blanc winery, the grapes are grown following the guidelines of organic agriculture. Besides, all the winemaking operations are carried out following the principles of biodynamic farming.
Each of the varieties was harvested by hand and separately vinified. The wine was produced only from the "free-run" juice.
Once the two fermentations were completed, Raventós i Blanc De Nit Brut 2017 was aged for over a period of 18 months. The disgorging date is printed on the back label.
The rosé wine Raventós i Blanc de Nit Brut has a clean, bright, pale onion-skin colour with some rosy tinges.
Pure aromas of white fruit, citrus, white and blue flowers, alongside some dim remembrance of blackcurrants and wild berries, an additional layer of complexity provided by Monastrell. On the background, this organic rosé sparkling wine suggests notes of pastry and lees, along with some mineral undertones.
This rosé sparkler by Raventós i Blanc is extremely fresh and pleasant. Very elegant, with tiny, well-integrated bubbles and a creamy, smooth body. Fresh notes of strawberries, aromatic herbs, dry fruit and citrus, nuanced by some remembrances of butter, flowers and pastry and a crisp, tense acidity. This wine from Conca del Riu Anoia has a long, suave finish.

This rosé sparkling wine Raventós i Blanc de Nit Brut 2017 is the perfect wine for a dreamy, romantic night. At a worldlier level, it pairs wonderfully with shrimp, pasta and rice dishes.

One of my favourite sparkling wine producers, who left the derelict Cava designation for good some years ago-and rightly so. Superb texture, sexy and caressing, long finish.
