In 1962, Josep Mata Capellades, founder of the Recaredo winery, decided to craft an age-worthy Cava which was able to express the potential of Xarel·lo and Macabeo to produce world-class sparkling wines. The result was Recaredo Reserva Particular.
A dry, tough year, the 2007 vintage of this Spanish sparkling wine is, like the first one, a blend of Xarel.lo and Macabeo coming from very old, Demeter-certified vines grown via the principles of biodynamic farming.
The Xarel.lo grapes were fermented in oak barrels, while the Macabeo ones completed the process in stainless steel tanks.
Then the wine was blended, bottled and aged on its lees for 117 months.
Finally, Recaredo Reserva Particular 2007 was manually disgorged and added no shipping liquor. The disgorging date is printed on the back label.

The organic sparkling wine Recaredo Reserva Particular has a golden yellow colour with some green tinges.
This biodynamic Gran Reserva Brut Nature by Recaredo is amazingly pure and deep. Terroir-bound and very well defined, with alluring mineral undertones and lively floral notes, nuanced by some delicate spicy and buttery remembrances, coming from the fermentation in oak of Xarel.lo. Ever-evolving, as Reserva Particular opens we also smell aromas of aniseed, smoke, dry fruit and citrus.
Dry, with a laser-like precision, intense and quite young, with plenty of room for growth. The wine has an exceptional acidity, a solid structure provided by Macabeo, and a remarkable integration of bubbles. This Cava from Recaredo suggests white fruit, Mediterranean underbrush, white flowers, orange blossom and lemon rind. Distant echoes of smoke and flint, and again a buttery remembrance. Extremely long, complex finish.

The formidable Recaredo Reserva Particular 2007 is already a world-class sparkler. On top of that, it has a tremendous potential for improvement.
