The Recaredo winery, the first Cava producer to obtain a Demeter Certification for biodynamic agriculture, presents Recaredo Serral del Vell, formerly known as Recaredo Brut de Bruts.
The Serral del Vell estate is located on a plateau composed of limestone soils on the riverbanks of the Bitlles river. The organically grown estate has been recognised as Paraje Calificado. This recently created category was launched to highlight the best terroirs in the Cava designation.
This Gran Reserve Brut Nature is made from a blend of Macabeo and Xarel·lo coming from low-yielding grapevines. After a meticulous vinification, Recaredo Serral del Vell 2009 was aged for 96 months in the bottle. The bottle was manually disgorged.

The Cava Recaredo Finca Serral del Vell has a nice golden colour with some bright golden tinges.
Intensely balsamic, this blend of Macabeo & Xarel·lo suggests aromas of white fruit nuanced by hints of fennel, liquorice and aniseed, dim remembrances of lees and white flowers, and some mineral intimations. The nose of this Cava Gran Reserva shows real complexity and refinement.
Extremely fresh, with a delightful intrincacy and a fabulous potential for growth, this Cava by Recaredo combines in the very evocative way remembrances of fruit, Mediterranean herbs, some buttery and creamy notes and a touch of dry fruit. Crisp and dry, extremely pure, this Cava de Paraje Calificado ends with an elegantly bitter note, Xarel·lo's trademark.
