Produced by the Recaredo winery, Recaredo Subtil Gran Reserva Brut Nature is made from grapes coming from a single estate, called Serral del Roure.
The word "Subtil" (Subtle) is not an overstatement, but a rather accurate description of this organic Spanish sparkling wine.
All of Recaredo's vineyards are estate-owned and Demeter certified, proving the commitment of the winery to the principles of biodynamic agriculture. The winery also belongs to Corpinnat, a recently established association of Cava producers that aims to bring together those wineries with the highest quality standards.
The 2011 vintage was a very hot one. Harvest took place quite early, during the second half of August.
Then Recaredo Subtil Gran Reserva Brut Nature 2011 was blended, bottled and aged for a minimum of 66 months in the cellar.
Finally, this organic Cava was manually disgorged and added no shipping liquor.
The disgorging date is printed on the back label.

The organic sparkling wine Recaredo Subtil Gran Reserva Brut Nature has a pale, straw-yellow colour with some greenish tinges.
This blend of Xarel·lo and Chardonnay has an inviting, evocative nose. Creamy aromas of raw almonds and toasted hazelnuts, nuanced by remembrances of pastry, spices and white flowers, as well as aromas of toast, aniseed and citrus.
Fresh and creamy, with mineral remembrances, as well as notes of dry fruit, balsam, roasted almonds and white flowers. This Brut Nature Gran Reserve has depth and impulse, an excellent acidity and a silky texture. This is an organic and biodynamic sparkling wine with a very long, complex finish.
